But I Don't Want to Give up Bread!



I love bread.  White bread, whole-wheat bread, French bread, I love it all.

A month ago I decided to give up gluten.  I hadn't been feeling well.  I was tired all of the time, I couldn't think clearly, was constantly having headaches, my mouth was full of ulcers, just to name a few problems. :)  I had already figured out how to make many things gluten-free for my daughter (she's been off gluten for over a year now) so it wasn't going to be too hard for me to do.



The one thing I knew I was going to miss was bread.  I had a bread recipe that I'd been making for Abby (here), but my bread machine is slowly dying and I knew we couldn't keep it up forever.  I had to find a recipe to make without a bread  machine.  I found this recipe on Pinterest for hamburger buns and decided to make it into a loaf with things I had available.  So, here is my recipe for yummy white bread.  {I like this recipe more than my other bread recipe}

Here are the ingredients you'll need:
1 cup warm water

1 tablespoon sugar
1-1/2 teaspoons yeast
3/4 cup brown rice flour
1 cup + 1-1/2 tablespoons potato starch
1/2 cup tapioca starch
1/3 cup white rice flour
1 teaspoon salt
3 small eggs
1 teaspoon white vinegar
1/4 cup vegetable oil

Step 1: Preheat oven to 1700 F (800C).  Yes, it is supposed to be that low of a temperature.  Grease a loaf tin.

Step 2:  Mix sugar in water, sprinkle yeast over the top of the water and leave this to proof.


Step 3: Mix dry ingredients together.

Step 4: Separate the whites from 2 of the eggs (keep the yolks, you will need them soon).  Beat the egg whites until soft peaks form.  You can use an electric mixer if you want to.  It only took me 3 minutes to do it by hand.

Step 5: Add remaining egg, egg yolks, vinegar, oil, and yeast mixture to egg whites and blend together well.

Step 6: Add egg/yeast mixture to dry ingredients and stir for 3 minutes.

This is what the mixture will look like after you have stirred it for 3 minutes.  It looks runny, but trust me, it will work!

Step 7: Pour into greased loaf tin.  Put it into the warm oven and TURN THE OVEN OFF!!!!  Let rise for 30 minutes.

Step 8:  After 30 minutes take the bread out of the oven, turn the oven back on, and heat it up to 3750F (1900C).

Step 9: When the oven has heated, put the bread back into the oven and bake for 30 minutes.

Step 10: Remove from oven and tip out on to wire rack to cool.  Brush with melted butter or margarine.  Let it cool for at least 15 minutes before you try to cut it.


 By the way, all of the problems I was having before I gave up gluten are gone!  Now if I could only find a good tortilla recipe that's gluten free.

Beth, Thanks for following my blog! I just realized who you were after you commented on my post today. I don't know if you remember but you and your family were at our church over a year ago. We went visiting in one of the girl's dorm in our local college! So glad to be able to keep up with your family and ministry!

Beth I've used this recipe over and over and over. One day I'll copy it so I don't have to keep going to this post! My husband thanks you soooo much! He didn't want to give up bread either, and this recipe has helped him so much!
